This 1861 military cookbook features two essays by Florence Nightingale called "Taking Food" and "What Food." In her essays, Nightingale attempts to dispel the modern nurse of her preference for serving invalids beef tea, and suggests that bacon, first thing in the morning, does not usually sit well with weak patients. It also features a spectacular array of military recipes designed to feed large numbers of men, both in the field and in the hospital. Examples include "Coffee for One Hundred Men," "Mutton Soup for One Hundred Men" or recipes for Beef Stew with Suet Dumplings. These recipes call for alarming quantities of ingredients, such as 75 pounds of beef or seven pounds of pork fat. No mention is made of the size of the cooking pots required to accommodate the ingredients!
