Some physico-chemical properties of spray dried black tilapia hydrolysate powder by Jamilah Bakar( )

A preliminary study was carried out for the conversion of liquid black tilapia hydrolysate into a powder hydrolysate. Liquid black tilapia was spray dried using a pilot scale spray drier at 150 and 180 C as the inlet temperatures and 76 and 90 C as the outlet temperatures. The total average yield of the hydrolysate powder was 19.7%. The resultant sprayed dried powder was also assayed for its moisture content, color instrumentally, oil and water absorption and emulsion capacities and the degree of caking. The average moisture content of the powder was lower for the higher drying temperatures. The physica-chemical properties reported indicate that on the overall, there is a significant difference between the two powders produced. [Authors' abstract]

Proteases from crude extract of Zingiber officinale Roscoe (ginger) was used for the hydrolysis of shrimp heads to produce hydrolysates with good protein quality and unique flavour. The proteases have optimum pH at pH 7 and optimum temperature at 60 C. Molecular weight of the proteases were estimated at 30,000 and 40,000 Dalton. Hydrolysates produced at 4% degree of hydrolysis are high in amino acids such as lycine, glumatic acid, leucine, phenylalanine, aspartic, aspartic acid, alanine, arginine and glycine. Inducibility of raw sago starch degrading enzyme from endophytic fungi as effected by carbon and nitrogen source by Yetti Marlida( )

Acremonium sp. was found to be the highest producer of raw sago starch degrading enzyme (RSSDE). The growth of the fungus and the production of the enzyme were studied under a batch culture condition using different carbon and nitrogen sources at varying pH and temperatures. The growth of the fungus and enzyme activity was highest with peptone and sodium nitrate as the nitrogen sources. The optimum concentration for peptone and sodium nitrate were 0.5 g 1-1 and 3 g 1-1. The best carbon source was raw sago starch with optimum concentration of 20 g 1-1. Growth and RSSDE production reached their optimum at pH 5.0 and temperature 30 C. Under these conditions, the enzyme activity followed late exponential growth with maximum yield of the enzyme at day 5. [Authors' abstract]
