En el presente trabajo se evalua el efecto de la atenuacion mediante choque termico a varias temperaturas de cultivos de streptococcus salivarius ssp. thermophilus y lactobacillus delbrueckii ssp. bulgaricus destinados a la maduracion acelerada de queso tipo Dambo. El objetivo fue establecer condiciones adecuadas para el tratamiento termico, suficiente para reducuir la produccion de acido lactico, sin danar el sistema enzimatico proteolitico importante para la maduracion del queso. Suspensiones de bacterias se cultivaron a pH constante y se calentaron a 63, 67, 70 y 72[vbar]C. Los cambios en el pH y en la actividad enzimatica mediante el metodo del acido trinitrobencenosulfonico se evaluaron para cada temperatura de atenuacion. Las celulas calentadas a 70 y 72[vbar]C produjeron acido lentamente despues de un periodo de retraso de horas, mientras que las celulas calentadas a 65[vbar]C lo hicieron rapidamente, con un retraso de 2 horas. Los cultivos calentados a 63[vbar]C se comportaron de forma similar al control la actividad proteolitica disminuyo en 30, 70, 83 y 93 por ciento respectivamente, comparada con la de las celulas sin ningun tratamiento(AU)

Se realizaron 132 muestras compuestas de leche cruda de las zonas altas y bajas del Estado Merida, ubicado en la cordillera de los Andes venezolanos, para determinar los principales elementos minerales, por su concentracion o importancia tecnologica, utilizando tecnicas espectrofotometricas de absorcion y atomica. Los resultados se agruparon para evaluar el efecto de la zona Baja vs. alta) raza (mestizo vs. Holstein) alimentacion (estabulacion vs. pastoreo) y epoca del ano (seca vs. lluviosa). Las concentraciones promedio globales obtenidas para el Estado en mg/L fueron: sodio, 537,0 n 143,05; potasio, 1327,9 n 133,84; calcio, 952,4 n 118,67; fosforo, 739,2 n 97,9: hierro, 0,397 n 0,1549; magnesio, 82,4 n 10,40; cobre 0,589 n 0,340; zinc, 7,95 n 1,737. Estas se encontraron mayores en las zonas bajas, probablemente por las diferencias en los sistemas de produccion aplicados. Se observaron elevadas concentraciones para el hierro y el cobre, lo cual hace presumir la posible contaminacion con utensilios de ordeno, transporte y/o conservacion que podria determinar susceptibilidad al enranciamiento oxidativo(AU)

Increase in the number of English language learners enrolling in American schools continue to rise while debates over the best way to educate these students are ongoing and unresolved. Critics of bilingual education, the program established to assist English language learners become proficient in English, argue that the program does not expose ELLs to enough English to become proficient quickly. As a result of this arguments three states, California, Massachusetts, and Arizona, have dismantled bilingual education from their districts and are now enrolling students in English immersion programs. Supporters of bilingual education argue that English language learners will be more academically proficient if allowed to learn critical content in their native language while learning English. The purpose of this phenomenological study was to investigate the educators' views and perceptions of the effectiveness of bilingual education. Sixteen educators from an urban school district in Texas currently working with ELLs were asked to participate in the study. Data collected included taped interviews and participant responses, classroom observations, and artifacts. The artifacts included classroom and curriculum materials, student work, student projects and technology. The study examined the experiences, knowledge, and perception of the participating educators involved in bilingual programs in order to identify its strengths and weaknesses. The study aimed to provide useful information that can assist policy makers, school districts, parents, and teachers make clearer, sounder decisions. Findings indicate that teacher participants value bilingual education as a program that effectively promotes students' learning of critical content skills while becoming proficient in English. Teacher participants' knowledge and understanding of bilingual education correlate with existing literature that students in bilingual education take approximately 5 to 7 years to become proficient in English and that they perform extremely well in state required tests
