Des dispersions de nanocomposites stables à matrice polymérique et à base de whiskers de cellulose ont été préparées par polymérisation en miniémulsion, dont on peut atteindre 5 % en masse. Ce procédé permet d'obtenir une distribution homogène des nanofibres autour des particules de polymère, et empêche ainsi les risques d'agglomération. La caractérisation de ces dispersions a été réalisée en recourant à divers techniques comme la diffusion dynamique de la lumière, zetamètrie, le microscope électronique à transmission (MET), à force atomique (AFM) et à effet de champs. Nous avons montré que l'accroissement du taux de nanoparticules s'accompagne par une augmentation de la taille des particules de polymères. Les propriétés des films de nanocomposites, obtenus après évaporation de l'eau et coalescence des particules ont été analysées par calorimétrie différentiel à balayage (DSC), analyse mécanique dynamique (DMA) et par essai de traction

Membrane separation processes are commonly used in dairy industry to concentrate and purify nano-particles dispersions. The main limitation of these separation processes is the accumulation of colloids on the membrane. The comprehension of the colloidal interactions and aggregations taking place in these deposits constitute a major technological challenge. The dispersions studied are casein micelles suspensions prepared in different aqueous phase. The effects of the physicochemical properties and the rheological behavior of the dispersion on the organization of the nano-particles and flow behavior were investigated and three domains of concentration were identified. New frontal and cross-flow filtration cells have been developed and combined with in-situ small angle x-ray scattering. The filtration properties have thus been linked to the spatial and temporal evolution of the casein micelles' concentration and structure at the pertinent nanometric length scales in the accumulated layers

The hydrodynamic governing a great number of industrial applications - in which yield stress fluids are used - has been investigated in this of work. The basic fluid mechanics problem that is the fluid flow around cylindrical obstacles is especially studied. Firstly, the case corresponding to very high Oldroyd numbers that is very little approached in the literature has been examined by extending the study to kinematics and dynamics aspects. Inertial effects are negligible. The case of one cylindrical obstacle and that of two cylinders in interaction are studied by numerical simulations. The results concerning rigid zones, stability, viscoplastic boundary layer are presented as a function as Oldroyd number. The case of one cylinder has been examined experimentally by drag measurement and flow characterisation by particle image velocimetry. The yield stress fluid used has been the subject of an in-depth rheometrical characterisation. Experimental results allowed to compare the elastoviscoplastic behaviour of the used gel to the results obtained with existing viscoplastic laws. In a second time, inertial effects were taken into account. An experimental study was undertaken on the flow around a cylindrical obstacle plunged in a rotating tank. This study, completed by numerical simulation, allowed to identify the effects of plasticity, shear-thinning and elasticity on the wake behind the cylindrical obstacle. Rayleigh-Bénard convection phenomena correspond to the unstable state of an horizontal and dilatable fluid layer under a temperature gradient DT. If it exceeds a given critical value DTc, convective movements appear. The phenomena becomes more complex for yield stress fluids. This threshold is added to stabilizing forces exerced within the fluid and alters the fundamental heat and mass transfer. The fluid is initially at rest and therefore the velocity gradient is zero, and the effective viscosity is infinite everywhere. The linear stability approach is unable to respond because we have to disturb Archimedes forces in a fluid with infinite viscosity. In this thesis, Rayleigh-Bénard experiments were performed with Carbopol 940 solutions which expressing a yield stress. The experimental apparatus allowed us to obtain interesting quantitative and qualitative results. The non-linear effect at the beginning of convection was observed and thermoconvective movements were observed using shadowgraphy technique

Packaging is a key step of cheese products industrial manufacturing process. It consists in filling containers of various shapes with non-Newtonian products while ensuring optimized rates. The aim of the present work is to describe the influence of cheese rheological properties as well as process parameters onto packaging, thereby contributing towards its optimization.Necessary for the study, the rheological behavior of cheese products on the process stress range at 80°C has been identified as shear-thinning with a yield stress, with elasticity both below and above the yield stress.Jets and filling hydrodynamics during packaging have been studied with three types of products by the means of the laboratory-scale process pilot, which is able to reproduce the industrial process conditions. After checking for consistency between experimental and litterature results for Newtonian products, the study focused on viscoplastic model fluids, Carbopol® hydrogels, and on cheeses.Five flow patterns have been observed and characterized through jet diameter, spread velocity during filling and final mound height after filling, which is a key factor of the packaging quality. Flow patterns dimensionless distributions have been determined from the forces involved in the system. Thus, the flow pattern can be predicted thanks to theses distributions from product rheological properties and geometrical and process parameters

The Arkometha® process uses biogas injections to mix agricultural residues (manure, slurry, silage, straw) in a dry anaerobic digestion process. Knowledge of the rheological properties of these materials, rarely studied in the literature, and especially not on an industrial scale, is an essential element to supervise and control the mixing process. This thesis aims to improve the understanding of the physical and rheological evolutions of these materials along the anaerobic digestion process. The literature showed the need for a rheometer able to measure the rheological properties of these products at the industrial scale. For this purpose, specifications were established based on the scientific and technical constraints imposed by these materials, which are considered as fiber concentrated suspensions. On this basis, a large rheometer for substrates, called RGDS for (Rheometer Grand Dimensions for the Substrate), was built, validated and commissioned on an industrial site. The van test technique was used to measure the yield stress and mixer blades, calibrated using the Couette analogy, were used to measure shear stresses. In the third chapter we have shown the utilization limits of the total solids (TS%), traditionally used as the main parameter for rheology controlling. In this chapter we treated the yield stress of these materials as a rheological parameter example. We have shown that it is more appropriate to control the water distribution in order to control the rheological properties of theses suspensions by taking into account the spongy nature of the lignocellulosic material. We have shown how to determine the critical concentrations separating the semi-concentrated, concentrated, triphasic and the wet granular behaviors and their relationship with yield stress. In the fourth chapter, we studied the effect of changes in the anaerobic digestion operating parameters, such as fiber size, temperature and TS on the rheological properties of materials. Several models and empirical equations have been proposed to quantify the advantage of making changes in the operating parameters on the rheology of these materials

The challenge of this work is to carry out the rheological characterization of concentrated suspensions of viscoplastic objects suspended in a viscoelastic matrix. Three structural constraints are faced: the heterogeneity of the particles, the size of particle in relation to the size of the whole system studied, and the proximity between the consistency of the suspending phase and that the consistency of the particles. In the food context, some biological constraints are added: small lifetimes of bolus, in vivo sampling and test conditions of temperature and humidity. All these constraints lead to a compromise in rheometry, at the edge of continuum mechanics, aiming to measure useful rheological properties. To carry out the rheological characterizations quickly and efficiently, two original devices has been designed trough this work. Applied to food bolus from cheese, rheology comes to govern flows in the mouth and induce the creation of exchange area in the mouth, during the chewing process. Through these interfaces, the savors and flavors are released and transported to the sensory receptors. The results show the relationship between the yield stress of the bolus and flavors release of different hydrophobic aromas, depending on the firmness and fat content of the cheeses. Specifically, fluid suspending matrix appears to play a major role in the creation and persistence of exchange area.Applied to gastric juice from bread, the issue is whether changes in carbohydrate content could impact the rheology of gastric juice, modify the kinetics of stomach flow rate, and decrease the glycemic excursion. The results show the effect of amylose addition on increasing the viscosity for long digestion time, when the rheology is no longer governed by the jamming effect of the particles made of water-swollen bread. The flow of yield stress fluids around a circular cylinder in a confined geometry has been investigated with a Poiseuille flow configuration.Experimentally, a test set-up was built which provides a continuous flow in a closed loop. We studied creeping, recirculating and vortex shedding flow regimes. New results has been realised with a Newtonian fluid and Carbopol solutions, models for yield stress behaviour in laboratory experiments and in industry. A high speed camera and a laser sheet have been used to perform images which are treated by PIV. Kinematic fields, flow morphologies and critical transition parameters have been determined.Numerically, a viscoplastic model based on the regularised Herschel-Bulkley law has been used. Results as flow morphologies, rigid areas and local flow parameters fields have been performed. That allowed us to compare the intrinsic effects of Carbopol solutions and the viscoplastic numerical model. A specific study on the wall slip has also been considered with an elasto-hydrodynamic lubrication model
